5 lb. fruit (apples, pears, etc) 1 1/2 c. sugar 1 tsp. vanilla essence 1 lemon
Peel fruit (also core apples). Bring 1 quart water to a gentle simmer, dissolving sugar in it. Grate the rind off the lemon, and add to sugar solution. In addition cut the lemon and add the juice of lemon along with vanilla to the sugar solution. Add the fruit and letter simmer until the fruit are soft (about 15 minutes). If more liquid is needed to cover fruit add water and sugar in the ratio 8:3.
Serve with ice-cream or chantilly-cream.
